These brownies are so moist and cake-like, you won't be able to eat just one piece! As always, the icing adds extra yumminess!
1/2 cup oil
1 cup water
1/2 cup margarine
2 cups sugar
2 cups flour
1/2 tsp salt
4 Tbsp cocoa powder
1 tsp baking soda
2 eggs
1 tsp vanilla
1/2 cup buttermilk
Combine oil, water and margarine in saucepan; bring to boil. Meanwhile, in large mixing bowl, combine dry ingredients. Add margarine mixture; stir to combine well. Add eggs, vanilla and buttermilk. Stir to remove any lumps. Pour batter into greased 9X13 pan. Bake at 350 degrees for 25-30 minutes.
Buttermilk Icing
1/2 cup margarine1/3 cup buttermilk
1/4 cup sifted cocoa
3 cups icing sugar
Bring margarine, cocoa and buttermilk to boil in saucepan. Whisk until smooth. Remove from heat and blend in sugar. Beat until smooth and creamy. Pour warm icing over brownies.
